Ma’asoob | Saudian Breakfast

Ma’asoob is popular in Yemen, Saudi Arabia and some other gulf countries. Usually, it is served as breakfast dish or a dessert after a meal. Since I was 6 year old I used to enjoy every bit of this dish. Until today, it is one of my favorite and inspirational element to me. As every dish in the word it has different debates about the origin of the dish, ingredients or even method. However, here I am talking about the version I fell in love with.

Traditionally it is composed of whole wheat bread crushed with banana. Over time, some additional ingredients such as cream and honey were part of the options as garnish. Today, many forms were created that in my opinion has driven away the main favors and the joy of childhood. Nevertheless, cuisine development favors the conservation of the tradition but merged with the modern cuisine, creativity in this case is the key to marry them.
Here we have the basic ingredients made with French culinary techniques, showcasing the beauty of original flavors. On the other hand, the sum of having 3 citrusy zests has given depth and another dimension of explosion in the mouth. Combined with crunchy bread croutons spiced with cardamom that melts with cream and citrus of lime zest. Where orange honey and orange zest comes to freshen up the after taste with mint leaves. Leaving you with the desire of joy!
